FLO BAR UNVEILS VALENTINE’S COCKTAIL SERIES INFORMED BY BEHAVIOURAL PSYCHOLOGY

This Valentine’s season, as people come together to celebrate love and connection in all its forms, new riverside cocktail spot Flo Bar has partnered with behavioural psychologist and relationship expert Jo Hemmings to explore the role of the senses in relation to attraction and connection. Drawing on flavour, aroma, temperature and texture, the collaboration translates behavioural insight into a limited-edition cocktail edit available throughout February.

A recent addition to London’s riverside drinking scene, Flo Bar is a dedicated craft‑led cocktail bar on the Thames at Fulham Pier, a calm, light‑filled space designed for unhurried moments and meaningful connection. Set against soft lighting and panoramic river views, it brings together community, curated drinks and a crafted sense of place. With refined twists on classic serves, a clean, botanical‑leaning flavour profile and an emphasis on thoughtful, beautiful execution, Flo Bar was created as a setting where people can slow down and genuinely connect.

For Valentine’s, Beverage Manager Stefano Chila and behavioural psychologist Jo Hemmings translate this ethos into a sensory‑driven cocktail edit. Rooted in classic structures and informed by behavioural insight, each serve explores how sight, aroma, sound, taste and texture can subtly shape mood and ease. Designed with intention, the menu is a moment‑in‑time expression of Flo Bar’s broader philosophy – cocktails to be enjoyed slowly, encouraging connection to unfold naturally.

Hemmings explains that attraction and connection are often shaped through subtle sensory cues rather than conversation alone. “When people share a sensory experience that feels comfortable and considered, they tend to relax, open up and feel more in step with one another,” she says. “That sense of ease is often where connection begins.”

Each cocktail on the limited menu pairs classic foundations with a behavioural insight, informed by Hemmings, and developed to foster closeness and elevate mood. With community always at its core, the edit reflects Flo Bar’s role as a place for gathering, and sharing time over a drink.

The Cocktail Edit:
Rose & Strawberry Negroni
Floral notes of Sakura and rose mist rise from the glass before the first sip, drawing on aromatic cues linked to comfort and familiarity, helping to set a relaxed emotional tone from the first sip.
Butterfly Collins
A colour-shifting serve that engages the senses using visual transformation and fresh, clean flavours to heighten anticipation and shared attention.
Flo Milk Punch
Whey-clarified to a natural silkiness, this drink focuses on rounded texture, often associated with indulgence and care. This serve layers rum, cacao, coconut, banana and citrus into a smooth, harmonious profile where each element works in balance.
Pomegranate Margarita
Sweet, sour, bitter, and heat collide in one vibrant, mouth-filling experience. A touch of scotch bonnet introduces gentle warmth, creating a subtle physiological lift that can be experienced as heightened energy and excitement.
Strawberries & Cream (Non-Alcoholic)
Vanilla and strawberry combine to evoke nostalgic, reassuring aromas that signal safety and softness, supporting relaxed conversation.

“Flo Bar has always been about creating a pause from the pace of everyday life,” says Beverage Manager Stefano Chila. “With the river always in view, it’s a place where people can take their time and really enjoy being together. My style leans on classic foundations with small, thoughtful shifts, and the Valentine’s cocktails follow that same idea – easy to settle into, but with details that make the moment feel special.”

Sound also forms part of the wider experience. From February, low-tempo live music will feature on selected evenings, with a piano introduced to the space to reflect behavioural insight around pace, rhythm and shared ease.

Flo Bar sits alongside Brasserie Constance, the modern British brasserie by Michelin-starred chef Adam Byatt, and is amongst the newest openings at Fulham Pier, a riverside destination on the Thames bringing together food, drink and a year-round programme of cultural experiences in one setting.

While the limited-edition Valentine’s cocktail menu runs throughout February, on the evening of 13th and all day on 14th of February, tables in Flo Bar will be available for booking, allowing guests to plan their visit around the Valentine’s edit and settle in for the occasion. Priced at £55 for two, the package includes: 2 x Valentine’s cocktails, Gallagher oysters, Smoked salmon blinis, Chocolate truffles.
